It combines grilled lamb with fresh vegetables and herbs for a bright, satisfying dish.


Ingredients:


  • 8 ounces lamb loin, grilled and sliced thin

  • Mixed salad greens

  • 1 cucumber, diced

  • 1 cup cherry tomatoes, halved

  • 1/4 cup crumbled feta cheese

  • Fresh mint leaves, chopped

  • Juice of 1 lemon

  • 3 tablespoons olive oil

  • Salt and pepper to taste


Instructions:


  1. Grill the lamb loin to your preferred doneness, then slice thinly.

  2. In a large bowl, combine salad greens, cucumber, tomatoes, and mint.

  3. Whisk lemon juice, olive oil, salt, and pepper to make a dressing.

  4. Toss the salad with the dressing, then top with sliced lamb and feta cheese.
